HOLY MOLY SARAH! IS THAT A KITCHEN AID STAND MIXER ON YOUR COUNTER?!!??!?! Yes!!!!!! My aunt Eileen and my dad gifted me with this beauty of a machine for my birthday. I am quite elated and feeling very lucky. Thanks again you guys!
I decided to break my new baby in with a simple batch of chocolate chip cookies. Now. Historically I have very little luck when it comes to baking cookies. Either the dough turns out too runny, they burn on the bottom but are raw on the top, or they dry out completely. Personally my favorite cookie is one that is crisp on the top and bottom, but filled with a chewy, gooey, center. I’ve never been able to make a cookie like that for myself. This recipe called for: flour, granulated sugar, brown sugar, baking soda, vanilla, butter, salt, chocolate chips and two whole eggs. I ended up cutting the amount of sugars called for considerably since sugar in this case was meant for flavor and not the chemistry of the cookie so to speak. The chocolate added more than enough sweetness.
This was really exciting for me. When making cookies you generally want the butter to be softened a bit, but still cold enough that you can “cream it.” This isn’t impossible to do by hand, but it is definitely time consuming and can leave your arm a little sore. I was THRILLED to watch the machine go to work..

After adding the chocolate chips! Again I modified the recipe which called for the entire 12 oz bag of chips. I ended up using roughly half the bag, maybe a little less. I’m not a huge chocolate fan so I was happy to do this.
Ready to bake at 375 degrees for 11 minutes. No more no less! Trust me on this. Taking them out a minute or so before they’re “done” leads to that perfect, chewy melty texture and keeps them from being too crispy. But then again if you’re some kind of “crunchy cookie” heathen do what ye will (and bake them for 12-14 minutes.)
VOILA! Perfect, evenly baked, chewy, gooey, splendid cookies. This is a good time for me to recommend living with an adult male. Because they eat the cookies faster than you can, thusly keeping you from ingesting too many. BEST OF BOTH WORLDS BABY. Best of both worlds.
